What is the meaning of 'mostly flat'?

Breakfast in the hotel was 7 am and we were there shortly after, seated front and centre near the coffee, eggs, sausages etc. What were we thinking? Down the back and out of the way is much easier to butter your baguette, and stuff with ham and cheese, out of everybody's sight. Yes, for the first time we made our lunch from the hotel breakfast (for this holiday).
The cereal was nice but the eggs and sausages and weird fruit cups were a little bit funky. My cappucino came out of the machine milkless, but we did have a good sleep so I won't complain ... except about the breakfast.
Our Uber guy took us to the other end of town and our next adventure, that of driving in France for the first time. 
Our first journey went pretty well, but I have to learn to breathe when driving a large car on little roads on the wrong side of the road (unless you take the one wrong turn of the day and end up driving through wheat or corn or potato fields (I was concentrating on looking straight ahead for oncoming traffic) in a road big enough for a motor bike. No traffic came. 
Destination achieved (Étretat), we drove in, then out, then into the parking area, used more free toilets, paid for parking and hit the track for a 'mostly flat' walk.
10 floors is my daily target.
It was pretty spectacular scenery and the golf course next to it was also making me plan a trip back to these parts with my Wilson Driver and Cleveland Irons (yeah right, like I will still be playing with those when I come back).
We ate breakfast lunch on the way back and did notice how many people had baguettes in their bags. Has anybody else ever referred to a baguette as a Long Tom, or is it just a Krause family thing?
Walk done, car set up to play my Spotify and a decision made to take the tollways, we hit the road. So many roundabouts to test me. Two tolls to pay, two stressful moments negotiated, a giant bridge driven over,
and we arrived at the hotel in Honfleur ... to a very full car park. Reception helped with parking and it was very tight. Good thing we took the tolls as 10 minutes later there was no parking.
It's a very nice town with a big wooden church,and boats and lots of restaurants. We checked it all out, as well as a supermarket to buy some drinks and French cordial (as our bags aren't quite heavy enough). Back home to write two days backblogs and off to a nice dinner that satisfied Annette's need for seafood.
As usual, it's still very light outside at 9:30 pm. There are only French channels on TV (what are the odds)?

The fine print. Pastry and ice cream was not eaten by all members of the travelling party.
